What is this course about?
This will be both a theoretical and practical course in which we will tackle the theme of the modern padellino pizza characterized by different doughs and consistency, and implementing various types of preferments and different types of leavening. In addition, we will also focus on innovative and selected dressings.
Why this course?
✔️To get to know and learn how to select the raw material, using different grains and preferments.
✔️To properly match and create dressings thanks to the different ingredients.
✔️To discover how the various types of baking can influence and change the taste and texture of the final product.
It will be a unique experience, all thanks to the enthusiasm and passion of a master of excellence: 𝗙𝗿𝗮𝗻𝗰𝗲𝘀𝗰𝗼 𝗣𝗼𝗺𝗽𝗲𝘁𝘁𝗶, in which the keyword ‘dough’ is a tangible plot of a long family history, more precisely 4 decades of life and taste.
And we look forward to being able to share this day together with you, in our laboratory, just a stone’s throw from our Mill.
